In a court of law, someone on the opposing side would prosecute. Have you noticed how the 'defence' side is stressed in the popular name for the accused- 'defendant'- it seems to imply that the accused will always plead not guilty!

As defending someone is to protect them, you could say that the opposite is to attack.

However, perhaps the most logically correct opposite of defend is simply to 'not defend' - however, this could be interpreted as simply not doing anything at all rather than attacking someone.

In the military you either take offensive of defensive action.

Picnic: you obviously don't understand law. One of the main tasks for the defence is as you say - to protect. That includes attempting to protect their client from the full severity of the law. They spend ages attempting to say that it was not their client and even if it was, it wasn't his fault so please just let him off with a fine because he's really learned his lesson.

And how can not defend be the opposite of defend? Do you know what opposite means?

Depends in what context. Here is a short list: : prosecute, attack, offend, contradict . There are others. All, the opposite of defend, but each means something else.

ATTACK! cos defending is where you stop something from being invaded by enemy forces, and attack is when you invade something controlled by the enemy. They are both basically two oppersites.
