What should I get my wife to show her how much I love her?

Do NOT go with the cash or gift certificate under any circumstances. It's too impersonal.
The BEST gift is if you know something a bit frivolous that she wants but would never get for herself, like the day-spa package mentioned above, but it must be something that is a) for her rather than the two of you, and b) something she really wants.
However.
That isn't really the best way to show her you love her. Rather than buy something one time, DO things for her on a regular basis, things that you wouldn't do for anyone else in the whole world.
Wash her car every week. Take out the trash. Rub her back or feet. Show the same excitement at seeing her when you or she come home from work that you would if you'd been parted for six months. Remember her birthday and your anniversary with flowers. Write her poems that you hope-to-god no one else ever sees. Take her to a karaoke bar and sing to her.
Anyone can buy presents, but showing that you care requires you to care.

If this is just a random act of showing your love and not for a birthday or anniversary, then try something different. I admit that I love getting jewelry, but you can only wear so much at one time. I'm also no the "girly-type" but try this...
Get her a spa or hair appointment (or something of the sort) in the morning. Tell her how beautiful she looks a lot throughout the day. While she is out clean the house top to bottom and every room. Pack a lunch and take her out for a picnic when you pick her up from the appointment. You could also make up a card saying how much you love her and be specific about all the little details of WHY you love her. (We like hearing that) You don't need to buy her stuff. A hand made card is more heart-felt. When you get home tell her to relax and run her a bath (maybe put rose petals in it) use bath oils and scents etc. Rub her feet in the bath. Give her a massage on the bed when she gets out. And.... let it go from there. ;)
Good luck. You don't need to spend a lot of money, the things like cleaning, card, picnic, bath etc don't cost anything and are VERY meaningful. (I think I'd just die if my husband did that for me *sigh*)
Oh- I forgot, you could also get some champagne too? Flowers at home....
You could also take her shopping and stay with her and watch her try on clothes. Make sure you tell her how wonderful different colors look on her, etc. Get the whole outfit- shirt, pants/skrt, shoes, purse, etc. That'll eat that $500
Take pictures together of the 2 of you too. SO she can remember this day

God created angels in the form of a wife. They love , and nurture all your relationships with everything they have and maybe more. She sure deserves to be happy, and to be loved and treated right. You can’t make everyday out of the world amazing, but you can make it on her special day with some creative, different gift ideas for wife. She would feel your love and attention and such things last a lifetime. When you want to buy gifts for wife, remember their face and think what makes them feel good and excited and when you can recall it, you would be able to buy something of that sort for her. She has been giving and loving. She deserves to be happy and loved. And her special days to be made special for her. Your little thoughts and gifts for wife will make the day worth cherishing and loving and such time is never going to pass by. The woman of your life needs all the strength and for her you are the strength, show her the magic of love. Treat her out, do things she thought she might never in this life, take her by surprise, go to places she never have seen before but only wishes to. Be spontaneous and bring that shine out of her, the ideas are in plenty , you just need to be ready to implement and do her the justice of feeling grand.

What kinds of things interest her. Jewerly is nice but it is a little too overdone and easy. Buy her a package for a day at the spa or maybe a cleaning service to clean the house, so she dosen't have to. Puppies are always nice.

$500 is much enough to express your unlimited lover towards her.
Buy one nice sexy lingerie for her and give her at 12 O'clock sharp at mid night,
She will be even more surprise because in her mind jewelry, movie tickets or something else but not lingerie as a gift.

if she likes jewellery get her that. something you wouldmt always buy. Jewellery always does the trick for me. earrings or a nice necklace
