If you specify where you are starting and where you want to go, you will get better answers.
One of your best sources is state tourism agencies. If you search for a state and use "visit" or "tourism" you will find all sorts of information.
For motorcycle travel, one of the best sources is The Iron Butt organization, which was founded by long distance motorcycle riders. They travel to all 48 states in one month, things like that.

Eastern USA is a large area. A big section of that is the Smokey Mountains...great scenery on a bike. Stay in the Appalachians if going north, return along the Atlantic coast.
