I recommend staying at Disney's Economy / Value Resort: The All Star. You have your choice of the All Star Movies, Sports, Music, and Pop Century. These Resorts are great for kids and they are the cheapest of all of the Disney hotels. You can save money by staying on Disney property because you'll have free transportation, even from the airport and won't have to get a rental car.
Or you can stay nearby, but off Disney property. I recommend the Sheraton Safari Resort on Apopka Vineland Rd. just across the I-4 from Disney World. It is a very nice hotel, but they have great rates. And you can get a room with a kitchenette to prepare some meals. That is a great way to save money... preparing meals instead of buying them all of the time. Of course you'll want to enjoy some of the dining options Disney has, but breakfast and some lunches can be made ahead of time. Also, Disney's water parks allow coolers inside. So you can make sandwiches and take them inside with you!

If you go between Thanksgiving and Christmas it is cheaper but the most festive. Maybe you could have this trip be part of the Christmas gifts for your family?
If you want to stay on the property, which is what I would suggest, youcan finds rooms that have fridges and microwaves...the deluxe resorts do. But you would have to get to rooms to accomodate all your family. Or you could choose to stay in a villa that would have enough room for all of you. But the price may be more expensive than two rooms.
If you go to www.disneyworld.com you can plan your trip there. You don't have to book there, but you can get a general idea of what the cost would be. Disney also offers dining plans to help with the cost of food.
When I have gone in the past, my son and I usually skipped breakfast. We lounged around in the room until mid-morning, maybe having some snacks, but rarely having a true breakfast. That allowed us to have a nice lunch and then a lighter dinner. We stayed at the Animal Kingdom Lodge and they have a cateria so we could grab whatever we wanted for the evening. But depending on the age of your kids, that may not work.

if you want to stay on disney property (highly recomended, makes traveling sooo much easier if you don't know the area), stay at one of the all-star resorts. they're very cheap if not the cheapest, and have a reasonably priced cafeteria in the main part of the hotel.
