Breakfast: Bellagio Cafe
Lunch: poolside, or just grabbing a quick bite in a sports bar
Dinner: tied: Bellagio weekend buffet or MGM Grand Buffet anytime.
Show: Mystere!!! By far the best of the Franco Dragone shows!
Must sees (for free): the Fountains of Bellagio, and the Conservatory at Bellagio, Sirens of TI at Treasure Island.
Best Drinks: Bellagio
Prettiest/Sexiest Waitresses: Venetian
Most Beautiful People: Bellagio (by far)
Coolest bar (free): Shadow at Caesars
Shopping: Caesar's Forum Shops (worth the trip just to look around). There is also the mall accross from Wynn.
Dont's: The Las Vegas monorail has become rediculously expensive. I believe the passes are $45 a day per person, and the stations are WAYYY in the back of the hotels, so its a long walk to and from the strip.
Do's: If you are looking for a cheap meal, head to the mall accross the street from Wynn and eat at the food court.

if you want to go dancing and have some fun, you should try PURE nightclub at Caesars. You can even visit the website I listed below for detailed information about the clubs, bars, restaurants, etc in vegas. Mandalay Bay and Hard Rock both have great pool areas. Go to all the hotel web sites to see what pools look good. Definitely check out the Cirque de Soleil at the Bellagio its called O.

A really cool restaurant is Jimmy Buffet's Margaritaville in the Flamingo. Also, if you're into shopping the Fashion Show Mall on up the strip a bit and the Forum of Shops at Cesar's Palace are awesome places to shop. We're going in January and have reservations at Emeril's New Orleans Fish House at the MGM Grand.

Not sure where you're staying, but I wouldn't pay too much for the hotel room. You won't spend any time in it. Just pick a good location, in the middle of the strip is preferable. The Flamingo has a great location, even though the hotel is a little older and the rooms not quite as nice. It costs much less.
Other than that, check out as many shows as you can because you probably won't make it back that often. I can definitely recommend Penn & Teller. Very funny.

We booked a tour that took us out into the desert riding ATV's this summer. It was a blast-something we'd never tried before. The scenery was beautiful, and the ride was so much fun! I highly recommend that if you like some action. Our pool at the MGM Grand was excellent! If you like Prince, there's a show called Purple Reign at the Monte Carlo--I think he plays Wednesday nights at 10 in the bar. That was a blast--people really got into it and the guy was incredible!

We are a 30's couple going to vegas in October as well.
We got tickets for Zumanity and Bite because they look pretty interesting.
There are some cool plane/helicopter trips to the Grand Canyon but we passed on those.

My best advice is to find a hotel near the monorail. Avoid certain hotels when lining up for a taxi: Caesar's, Imperial... ask your taxi driver which are worst / best to pick up a cab.
Get a travel book on Vegas, that's where you'll find your answers. Also check out vegas.com as an excellent site to purchase tickets for shows.

The Star Trek Experience at the Hilton is a lot of fun. Also, the rides at the Stratasphere. Downtown is fun, see the Fremont Street Experience at night.
