I've used a variety of things.
1. Citrus Peels - lemon/lime/orange/grapefruit.
2. There's a product called "Plink" that works nice.
3. There's a cleaning product called Disposer Care -http://www.ironout.com/mini_sites/disposer/disposerpop/ - that works with lower-powered disposers.
4. You can fill the sink with hot water, pour a half-cup of bleach in the sink and a few teaspoons of dish detergent, pull the plug and turn on the disposer. Run for about a minute after the sink drains.
The other think to consider - look to make sure that the s-traps are installed correctly. If you have a dual sink, there should be one for both the disposer and the side-sink. Otherwise you can get gasses coming up from the sewer or septic tank. The s-traps keep a small amount of water in them to prevent those smells from coming back up the drain.

While it is running with water pouring into it, dump half a box of baking soda into the garbage disposal.
You can also pour white vinegar into it and let the vinegar sit in the system for half an hour or so before running it with water.
Basically, what you're doing is "brushing its teeth"... cleaning bits of food, grease, and bacteria that are making the disposal smell badly. A squirt of dish soap and hot water every time you run it is a good preventative.

First, clean the blades - to do this, run water, run the disposal, and drop in 10 to 12 ice cubes - this removes any build up.
Then, any of the other answers will help - if I am using any citrus fruit (lemons, limes, oranges) I alway throw them through the disposal. Any time I am getting rid of the box of baking soda from my fridge, I dump this down the disposal.

I was told by someone who works for Roto Rooter that a tray of ice along with some good smelling dishwashing liquid would take out the smell.

Baking soda, lemon & vinegar.
Use the baking soda & vinegar (they will foam, remember the volcano you built in 5th grade?) That will make the bad odors go away. Then, after you squeeze lemons & save the juice for drinking or cooking, grind them up every week to keep it fresh.
Don't grind up meat by products, that will help too.

Put your lemon & orange peels in the disposal, always. For a quick fix try arm & hammer baking soda.
