Both of them are appropriate spellings, but they mean different things.
Cream is the stuff that comes off the top of the milk after it comes out of a cow.
Creme is the white filling that goes into cookies or is otherwise somehow artificial.
And creme brulee is spelled that way because it's French.

Both are correct spellings, it just depends in which way it is being used, like you said Creme Bruille and also Strawberries and Cream. They are pronounced differently as well.

Cream is English. Creme is French. Despite the sudden rise in popularity of using the word creme in place of cream on certain commercial products (e.g. "strawberries and creme" or "creme rinse") creme should really only be used when referring to something that is French. Therefore "Creme Brulee" but "Peaches and Cream."

Creme Brullee is French, so that is correct and is pronounced "cremm". In English the word is "cream" but has been changed by American commercial companies to "Creme", presumably for the people who might think "Cream" is pronounced cree am!

Pisceswoman - we say and spell "cream" exactly lik you do! I would guess the answer to the question lies in the fact that it would be misleading to call it a "cream egg" when there is no cream in it. The use of the French word "crème" gives the impression of a cream-like texture without claiming that it actually contains cream. I don't know if that's the real answer, it's just my thought.
