Just say
"There is something very appealing about you" or
"You have most likeable features" or
"Holyshit - what a hornbag"

If you see a fit guy and want to tell him you find him attractive, then simply say what you feel is right at the time.
If that 'offends his masculinity' then he is quite probably a Muppet in the first place and, fit or not, not the guy for you.
I'm a 6' ex soldier, with short hair, a tasteful facial scar (ok, maybe not tasteful), and hairy toe's.
But I love to hear my wife tell me I am beautiful.
Say what you feel.

"Gorgeous"...maybe. Most words (other than "handsome") praising appearance are connotatively connected with femininity. Getting out of the strictly literal realm, "You look awesome!" is a compliment acceptable to both sexes.

But to compliment someone without insulting them, you should stay away from using words that they might not understand. Handsome is perfectly acceptable.
