what worked for me was to outpace my metabolism. i kept eating until i reached a calorie level that caused me to gain weight. here is my regular diet:
breakfast: 1 nutrigrain snack bar
lunch: spaghetti or mcdonald's meal or other relatively heavy meal
dinner: full course meal, usually 2-3 pounds of food, 1/3 meat, 1/3 rice, 1/3 veggies.
late night snack: 2 hot dogs with cheese or 2 pieces of french bread pizza before bedtime.
about me: i hit 115 lbs as a sophmore in high school, and stayed that weight until i was 30. After I started this diet, I gained 35 lbs over 2 years.

Some people dont gain weight that much despite their eating habits. It might be genetics! or there might be other reasons!
