To "carry the conversation" means to help it along. The idea is that you're carrying the burden, you're doing all the work by thinking of new things to say. You're carrying the conversation forward, and making it keep going, while the other personisn't putting in as much effort. Or they simply aren't good at thinking of things to say.

Not sure if it's from the kid who doesn't get to play the sport, but brings water to the players, or if it's a slave reference, but it means they aren't being their own person.
