Contour plowing keeps the soil in the shape of the land, thus preventing the water from taking the soil away. Many years ago farmers did not know this and they depleted the soil of its nutrients. That is part of what caused some of the "dust bowls."

It helps definitely for erosion, but also helps prevent soil "compaction" from equipment rolling over the same area, as in what can occur from planting/harvesting operations.
That is often why you can see that a farmer plowed diagonally in his flat fields.
