Hmm... A lot of the answers here are the same. And most of them aren't really that good (For the English Version) But if you prefer anime that way then here are some choices you should enjoy.

There are only a few but they vary in a wide varitey. Anime has many different genres. Most of the ones I listed are shonen series, targeted towards boys.
If you really want to get an anime by your own genre taste, I would suggest using Wikipedia for your search.

for MOVIES
try the Citizen Kane of anime films Akira. The first critically acclaimed masterwork of anime.
Also on the "ohmigodthisistoogoodtobejustafilm" list is
Ghost In The Shell and Ghost In The Shell 2:Innocence plus the tv series Ghost In The Shell: Stand Alone Complex also Howl's Moving Castle, Naussica of the Valley of the Mind, Castle In The Sky, Whisper of the Heart, Wings of Honnidaise, Ninja Scroll, Appleseed, Love Hina: Spring Movie, Esacflowne, Slayers:Great, Demon City Shinjuku and Project A-ko (a spoof of anime films and super heroes). Notice these are movies not tv series with the exception of course of the amazing Ghost In The Shell:SAC.
I recommend going to netflix and just checking under genre for anime and they'll list pretty much every anime film ever released on DVD with reviews and ratings by critic reviews and by customer reviews so you can see what the critics and anime fans said.

Tenchi Muyo for theme (boy meets girl, meets girl, meets girl..ETC... funny and poor guy) sci fi
The Slayers. The TV series are good adventures. The OVA's are hilarious. fantasy
Blue Seed. A great soap opera filled with plant monsters, an outcast god, and an evil twin. sci fi/ fantasy
