For example, if I had the word "literature", I could use the letters to make lit, rat, tire, rate, true, tile, etc etc.

Is there a name for these words that come from other words?

The derived words are called "scrabbloids" of the original word.

They are called anagrams.
I really think that anagrams are the correct term. I have a game on my pocket dictionary called "anagrams" and it gives you a word and you have to find all the other words hidden in it. So...
