Fried Artichokes
3 Lemons of juice, strained
6 artichokes
pinch of oregano (dried)
1 chopped garlic clove
vegetable oil (for frying)
5 tbsp. all-puropse flour
1 egg
salt and pepper
lemon slice and fresh parsley sprigs for garnish

Add a pinch of salt and the juice from one lemon to a largepan of boiling water. Trim artichokes, but be sure to reserve the stems. Cut the heads into wedges and chop the stems, then add to the pan of water to simmer for 4 to 5 minutes. Drain and tip into a bowl. Season with salt and pepper, sprinkle with oregano and garlic and pour in the lemon juice which remains. Mix, cover, and marinate for abour 2 hours. Heat the oil in a pan. Place the flour in a shallow dish and beat he egg with a pinch of salt and pepper in another dish. Drain the artichokes, then dip them first in the flour and then in the egg. Fry them - in batches - until golden brown and crisp. Remove with slotted spatula and drain on paper towels. Arrange on serving dish and garnish with lemon and parsley.
