in the chords, the O on the chords mean play only that/those strings, right?

and: what is the eisiest song to play? please give me the link to it

Indeed the O-pen means no finger on that string. The little black circles on the other strings tell you where to put your finger on that string. You play all strings in every chord.

It would be damn difficult to play a chord and leave out the third string but play all the rest.

The 'O' means open, or play that particular string with no fingers on any frets. The easiest song to play would probably be the verse of 'One Note Samba', but sorry, I don't have a link -- it goes doooo do do do doooo doooo, do do doooo do do do dooooo -- on any note you like, although usually it's in B flat and an 'F' note would be fine. (1st string 1st fret)

If I remember correctly, it means those are the strings you play open (in other words with no fingers on that string) although I could be mistaken.
