White horse can have two main meanings that are very different from each other. According to your context, it means, inferring from the "college grads" comment, that white horse symbolizes success and progress through hard work and perseverance. However, be very careful when using it because "riding the white horse" also means doing cocaine. This can be found in urbandictionary as well as different rap songs, such as nice and smooth's "sometimes I Rhyme slow" referring to a girlfriend who did cocaine.

I'm not sure if it means the same in horses. But in rabbits it just is a grouping term. Rabbit breeders or rabbit enthusiasts are often called rabbit fanciers. Also fancy can be used to refer to a particular breed or particular style/grouping of animal. For example, have you ever heard the term, "well, that's just your fancy." It is the same as saying, "well that's just your style" or "that's just your preference."

I have been around horses all my life and have never heard that term.

If it was used in an ad I would say they were just trying to catch your attention....which they did!

As far as the horse that you rode.....it's JUST a name.
