I understand the nature of holography - interference patterns, wavefront reconstruction, generation of diffraction grating, etc... But I have heard that holograms, ie, interference patterns resulting from object and reference beams can be captured on regular film as opposed to paying a bundle for holographic plates...

Holograms are three-dimensional images produced by capturing a laser light interface pattern on special film. Laser light is used because it is a very pure source of one color (wavelength) of light with very orderly waves. The word hologram comes from two Greek words holos (whole) and gramma (picture).

Holograpgy is a subject cocnnected with the LAW so be careful whenever trying anything with it
