What is the difference between Reducing sugars, and non-reducing sugars, or better still can you just help me define them. Loads of websites come up with words I don't understand, can someone help?

A reducing sugar is a type of sugar with an aldehyde group. This allows the sugar to act as a reducing agent, for example in the Maillard reaction....

reducing is the opposite of oxidising.
