why does the colour leak out of cooked beetroot in terms of permeabiity?

Oh...I'd say osmosis...high concentration of liquid in the beet will move to a lower concentration such as the water it may be in.

pigments are either water soluble (anthocyanan sp?)or oil soluble (chlorophylls and carotinoides).
