If you mean the first word after the shuttle touched down, it was "Houston", as if "Houston, Tranquility Base here. The Eagle has landed!"
If you mean the first word after Armstrong stepped on the surface of the moon, it was "That's", as in "That's one small step for man...", or maybe it was "That's one small step for a man...", hard to say.

The first word spoken from the moon was "Houston". "Houston, Tranquility Base here. The Eagle has landed." This was said as soon as the descent engine on the LM (Lunar Module) was shut down.
"Houston" may be a proper noun, but it is still a word.
When Neil Armstrong stepped off the ladder onto the moon, he said, "That's one small step for a man, one giant leap for mankind". Perhaps you thought it was "that". "That" is pretty common.

I suppose the first word was probably something like "wow" -- or something to that effect. But the first thing broadcast over the airwaves was "The" as in "The Eagle has landed."
Then there was the first word said when he stepped on the moon "One" as in "One small step for man, one gient leap for mankind"

"That's" was the first word said by a person standing on the Moon.
Neil Armstrong said, "That's one small step for a man, one giant leap for Mankind," as he stepped off the LM ladder onto the surface.
He did not say "That's one small step for man...", but it sounded like he did because the word 'a' was not picked up well by the microphone.
