How can I determine what substances will react with copper and cause a patina? I am researching common, low toxicity methods of patinaing copper, such as borax, salt water, vinegar. I want to find more but am unsure how to approach the topic.

True patinas are made over long periods of time and consist of oxides of copper. A mild oxidizing agent should mimic this process. Get several pieces of copper and treat each one with something that you have available. Let stand for a day or two and see how you like the patina.
