Because its a very traditional chinese dish. If you want the normal "vegetable" or mushroom then you will have to go to a very traditional restaurant. Its lovely anyway.

I guess through the years it became known in the Chinese restaurant community that chicken and sweetcorn soup is a safe bet to serve with their meals. It's also the cheapest choice as well. I mean, the won ton soup usually has shrimp which is expensive and they're certainly not going to bust out the pricey shark fin soup as a side to their meals.

The restaurants near where I live usually do a hot and sour soup to go with their lunch specials. I much prefer the chicken and sweetcorn.

it sounds like an american chinese restaurant. the authentic chinese restaurants doesn't really serve this dish
