Even though the price of stamps has since gone up? I mean, they all just say "1st" on them, not the price.

Or will I have to buy some 1p stamps to make up the difference?

yes you can still use them. If you buy 1st class stamps, they are valid whenever, even if the price goes up (so I was told by a post office cashier)

Yes you can, the 1st is a contract between you and the post office.

I've got all sorts of old junk in the drawer that gets stuck onto envelopes. No one tells me they had to pay the different...mind you, I have notice my christmas card list go down over the years.

Go ahead, wait 100 years until the1st class post is £100, then use your 27p stamp

Buy some 1p stamps to make the difference. I dont know how much your old 1st class stamp is worth, but currently it costs 33p.

The way the PS knows is because of the date. If you look closer, you can see the date printed on the stamp.

You will have to use 2 cent stamps to make it to 39 cents.

Another way they can tell is becaue of the picture. They would not print older stamp picutes and have them be usable for the current price. They issue out new ones, and then they'll be able to tell from what price date the stamps originated from.

yes you can - if you bought them at a lower price that's your good fortune. The reason they just say 1st instead of a price is because they would have to pay a cost every time the price went up

You can go to the post office and buy lesser cent stamps (they offer larger than 1 centers)

Yes, but you will or the recipient will have to pay the difference. 1st class stamps are coloured, so say last year it was orange, before, brown, before that purple, etc, so they will calculate how old the stamp is, what the difference in charge is and collect that money from the recipient before giving them the letter.
