JUST GOT INTAKE GASKET REPLACED BECAUSE OF LEAK LAST WEEK, BUT CAR STILL RUNNING HOT AND TAKING IN EXCESSIVE ANTIFREEZE AND WATER WITHOUT LEAKING BUT STILL RUNNING HOT AND THEN DYING OUT, AND IF IT DOESNT DIE OUT FROM RUNNING HOT, IT TAKING AWAY FROM THE POWER ALLOWING TO DO NO MORE THAT 30MPH, AFTER OR IF IT DIES OUT, IT WILL START BACK UP IMMEDIATELY ONLY TO GET HOT AND DIE OUT AGAIN OR REDUCE POWER

The cooling system could be vapor locked (meaning that there could be air in it).

check your oil is there water there.how about steam coming out of the tail pipe....if none there you did not warp your heads ,....so lets go with an air pocket trapped in the cooling system

get the thermostat checked and the water pump i owned a 99 grand am myself and had almost the same problem and that is what it was,,,,

There may be air in you radiator. try getting it flushed out.

did you replace your head gasket to? might be that, not your intake.
