When I used to work as a travel agent - I was a Far East Specialist - we used to use a tour company called Trans Indus. They're great and have a really good range of tours covering China.

Apart from those above, you could try http://www.vjv.co.uk/destinations/far-east/china .
They (Voyages Jules Verne) are based in the UK (I assume you are too!) and organise most of the excursions etc., so you don't have to do much yourself. They are part of the Kuoni group, so the quality of hotels is good enough. And it's worth checking out their special offers, as some of them can be pretty good value.
