Fried egg cannot be made to become liquid fresh egg by any known physical or chemical method. Therefore, the change is a CHEMICAL CHANGE-because the action cannot be reverse.

Generally speaking, PHYSICAL changes can be reverse e.g. dissolving salt in water can be reversed by simply evaporating to dryness, while CHEMICAL changes cannot be reversed e.g. burning a wood to became charcoal cannot be reverse to wood again.

Fried eggs undergo chemical change because you can't reverse this chemical reaction.

chemical. There is nothing physical you can do to get a raw egg from a fried egg.

The change is chemical. The major change is the protein molecules bind together to form very complex molecules, so the liquid turns to solid form. But it is not a change of state, like water changing to ice.
