enzymes are effected by temperature, most have an optimum temperature. pH is another factor, some prefer acidic pH while other may prefer a more basic pH. The amount of substrate material the enzyme has to work on. when there is less substrate the enzyme appear to work really fast. when the is more substrate material in the reaction, the enzyme increases in speed until it reaches maximum velocity (V). then it can go no faster than it is already going despite the amount of substrate. (saturation). also the concentration of inhibitors has an effect.
