I'm doing a project about baseball in my stats class, but the problem is I don't know much about the sport. Any help is greatly appreciated!!!

Looking over the list:

G means Games. It indicates how many games that a player has played in or a pitcher has pitched in.

GS means Games Started. It specifically indicates how many games that a pitcher was the starting pitcher for.

CG means Complete Games. These are the number of games in which the pitcher started and pitched for the entire game.

SHO means Shut-Outs. This is a game in which the pitcher started, pitched the whole game, and did not allow any runs.

SV means Save. This is a stat where a relief pitcher entered the game in which his team was winning and allowed the team to keep the lead.

SVO means Save Opportunity. This means that the pitcher pitched in a situation in which earning a save was possible.
(Here are the specific rules for what constitutes a save opportunity:
10.20 Credit a pitcher with a save when he meets all three of the following conditions:

(1) He is the finishing pitcher in a game won by his club; and
(2) He is not the winning pitcher; and
(3) He qualifies under one of the following conditions:

(a) He enters the game with a lead of no more than three runs and pitches for at least one inning; or
(b) He enters the game, regardless of the count, with the potential tying run either on base, or at bat, or on deck (that is, the potential tying run is either already on base or is one of the first two batsmen he faces); or
(c) He pitches effectively for at least three innings.)

ER means Earned Run. It means that the batters on the opposing team actually earned their run (as opposed to scoring because of errors).

HBP means Hit By Pitch. If a batter is hit by the pitch, he automatically gets to take first base.

All of these details are included in the Major League Baseball Official Rules that I have linked to.
