Truly fresh fish shouldn't smell fishy at all. It must be very fresh there!

Actually, they don't do anything special to make it not smell. You see when they use only the freshest of fish. That is actually how you tell if fish is fresh or not. Fresh fish does not give off an odor like fish you smell when you go into say Walmart or some other stores.

There are several ways to bring the fish with keeping freshness to the dinner table.

• The distribution system is very advanced in Japan. Fishes are fished in the early morning and will be delivered to the restaurant soon.
• They also have special van which can deliver fish alive.
• With their experience, they know what temperature should they keep when deliver.
(Today many Japanese restaurants in US are using imported fish directly from Japan.)

Because the fish is still fresh when they serve it. If you leave raw fish out for a few hours, it will stink very badly.

They're fresh fish. The sushi place that I worked at buy a whole fresh salmon and cut it up themselves. The freeze the unuse portion and thaw it whenever they need it. I LOVE SUSHI!!

fish does not have a fishy smell when it is fresh. when you are looking to buy fish in a store, you should actually smell it. it should have a "ocean" smell to it. thats how you know it is fresh.
