She calls me and tells me how much she loves me, and that she wants me back, and the next day she calls just 2 tell me that shes dating some other dude???

Yes, I think she likes you. It was a good idea to tell her you couldn't be friend since you have feeling for her. In any case she is right also since you were the one who broke up with her. You don't expect that she come and throw herself over you. I think you should ask her if she still have feeling for you in the that way you don't wonder around thinking WHAT ABOUT IF. I liked this guy and I never told him how I felt and I always regret it. He went ahead and moved on and I get so mad. It's a long story. It's better to clarify thing and don't let it go as an unfinished business. If she says she doesn't want to go with you then you don't want to be friend and keep a distant. Sounds like she is playing major head games, she may not know what she wants, but then she shouldn't be leading you on one day and kicking you in the face the next, make it easy on her, tell her you will be her friend (or not) but you can't be involved with her in that way.
