The deadline to apply to the program I want is January 1st. I am planning on meeting up with professors to talk to them about the possibility of them writing my recommendation letters in early November. Is that enough time?
Also, do I tell them that they have until January 1st, or do I tell them they need to complete them a lot sooner than that?

Your plan to ask for letters in November is a very good one.

You MUST tell your professors the actual due date, but you could certainly ask them to shoot for earlier submission. In most cases, they will be responsible for sending the letters directly to the universities to which you are applying, and so they will likely look on the websites of the departments in question. If you "fudge" on the due date, and are discovered, the professors may see you as a liar.

I would set a reasonable date that you need them back. November is good. If you wait until January 1, you get into the holidays, breaks, etc. and some may forget that far in advance. Good Luck.

I met with some profs like that, and they seemed to get them out in a fairly timely fashion, i didn't even have to mention that the deadline was soon to them. If you don't have send everything in together, just give them a stamped envelope and they'll do it. And usually the universities are okay if they come in a little later than your application, at least mine were. If you have to send it all in together or are worried about it, set up a pick-up day for like 2 weeks or soemthing, that way they'll get it done by then and you don't have to sound demanding like you need it by a certain time....i dunno....

The benefit in having English instructors write letters of advice for you is they are able to (or ought to have the skill to) write! yes it should be enough time if they like you they will give you a leg up on every one else.
