I remember some novel when i was growing up and the mail character would say, "I'd prefer not to" - it was a big deal in the book, and I'm trying to characterize it for my husband and I'm getting nowhere...

Herman Melville's Bartleby the Scrivner.

Probably Melville's "Bartleby the Scrivner", as said above; it's the only one I can think of, and it's the most telling line in the story.

FYI, "Bartleby" is just a short story, not a novel, but it's very popular in late high school and early college English classes.
