Mainly, the reason the colonies broke off is because the colonists didn't feel they were being properly represented in the home country with regards to taxations. They felt that if they were paying taxes to the crown, then they should have some say in the parliament (which the didn't). Of course the King of England was against this. So the colonies decided, enough is enough and that we should break free from England.

The colonies decide to break away from England because they felt that the British are making their lives harder. They doubted the British after bunch of acts, for example the stamp act, the British put tax on all legal documents. There were many acts to try to let the colonies pay the British government.

Well, the people who wrote the Declaration of Independence were white, upper-middle class land owners, and were put into the Continental Congress by more of the same. It must have been in the interest of those people to risk a war to better their own position.
