It may fit in between the swingarm or it may not, however it will roll the tire around the rim giving the tire a lousy contact patch and probably landing you on your head. Basically you can go one size higher than stock w/o major handling issues, although the stock size would be the best for that rim width. I'm not even sure the Kan-o-tuna came with a 160. If the bike came with a 150 then 160 is as big as you want to go, 160 then 170, you get the idea. If you find measurements you can send your wheel to Kosman and have it widened, or you can graft a wider wheel from a GSXR on to the Tuna bike.

The 180 tire is wider than the 160. It may not fit between the swing arms. Measure the room you have for a tire, then measure the brand of tire you're looking at to see if it will clear. Also, it may not fit your wheel.

Stick (no pun intended) with the stock size, it will handle better. The suzuki engineers know what they are doing.
