I am a ravenous reader too, but the one I keep going back to is The Eye Of The Tiger by Wilbur Smith.
Robert Jordan's The Wheel Of Time Series are amazing too, if a bit daunting in their shear number (there are 10 + a couple or prequels)
Start with the Eye Of The World if you are interested though...
