If you want to read a great interpretation alongside the Tales you are reading, try this:

It offers a fantastic line by line translation that makes it easier for you to understand the story while still going through and getting the important points in the language Chaucer used. Also, I suggest trying to read the tales out loud. For some reason, reading them out loud makes Middle-English much more accessible.
