Skin cells have many purposes. They are a barrier to invading bacteria, viruses, etc. Skin cells contain keratin that makes them hard and protects from desication (dehydration). Skin cells protect the body from abrasion by sloughing off when rubbed against objects, and they are part of the whole skin organ, which has many other functions such as temperature regulation.

Skin cells are the body's first barrier to disease and pathogens.
The skin helps regulate temperature.
They have glands that release oils to keep the skin smoother, and for perspiration (which again regulates temperature).
