I raise turkeys. The thing off the top of its head that hangs over its beak is called a snood. Below the beak, the red flesh is called a wattle. Where the neck meets the body, a tom (and some hens) will have a beard. The snood is retractable, it doesn't always hang in his face, and the beard can tell you a tom's age. Hope this helps!
