metal has a lower specific heat than does plastic. remember, specific heat i the amount of heat(energy) needed to raise one gram of a material one degree. metal requires less heat to reach the same temperature as plastic. eventually, they will both be the same temperature.
also, if you have a hollow handle, it will not get as hot because there is a larger surface area - to - volume ratio which will allow heat to be dissapated more easily.
