boiling is caused by heat/ and of course it boils at lower temperature with less air pressure,
evaporation is caused by the difference between the humidity of the subject and it's surroundings.
more evaporation in dry air...etc.

Evaporating = Transforming the liquid to a gas (for whatever purpose)
Boiling = Bringing a liquid up to near boiling temperature, but keeping it as a liquid (to say, cook!)

Boiling is the bringing of the liquid up to evaporation temperature. Evaporation is what happens after the liquid reaches that temperature.
