Specifically, from what direction do you serve plates and from what direction do you remove them?

I've always been told to serve on the right, clear from the left.
I have no idea how accurate that is.

Plus, it can be hard to serve on the right when people are leaning and talking or have a glass in their hand, totally oblivious to their server. I worked a very high end party once and served from either side, depending on whatever the client was doing. I tried to keep it consistent, but you never know what people are going to do, and you don't want their food to get cold while you stand there while they give smoochies to the person on the right.

And having to say "excuse me, ma'am" "excuse me, sir" "pardon me" gets REALLY old and annoying after a while. To both the server and the client. Everyone was happy as long as they got their food without me having to interrupt conversation.

undesirable provider = 20% tip good provider = 30% tip remarkable provider = 40% tip and up... undesirable tipping is a puppy peeve of mine. i visit truly slip the waiter/waitress a $20 if the guy who paid the bill skimped on the top. I truly don't have any concern tipping more suitable than one hundred% too. good human beings need to be recognized. particularly even as your eating a $30 plate of pasta...and they are serving it to you with a actual smile...
