The colour lacks contrast and saturation on old film.

Generally, the chemicals of photo-processing is not as easy to compliment the colours of "ginger" even where red-toned dyes were added to the film process emulsion.

Correct light compensation is a must and camera lenses have difficulty capturing sharp reds and blues, where extra-low dispersion glass (1.) is a good but not perfect substitute for moving pictures with said colour.

By and large, recent digital cameras that allow better colours are not compatible with experienced staff who have not availed themselves to the new technological advances. These equipment are available usually only to rich studios whose wealth is largely tied back to time tested techniques.

Do you mean gingerbread people or people with red hair?

Could be due to acting talent, but there are many actresses and actors with red hair.
