We don't need to count them, we know how big typical sand grains are, and can work out approximately the voulme of sand on all the beaches in the world, and so simply calculate the total number of grains. Of course it's rough as a badgers ars*, but it gives a good enough ball-park figure.

like-wise, we can count the number of stars in a given voulme of space and extrapolate.

But simple logic is enough to show that the number of stars must vastly exceede the number of sand-grains. Space, as the Hitch-hikers guide says, is BIG!
