Do they deliberately slow it down? Surely it's inefficient to sort them all...

Second class isn't deliberately 'slowed down', this is how it works -: If we have 10 sacks of 1st class and 10 sacks of 2nd class and it all fits on the van/lorry/plane it all fits and off it goes and is delivered the same day. If on the other hand it won't all fit on the vehicle the 2nd class gets left behind of course and that's the only time it arrives any later than 1st class which, incidentally is about 30% of the time.

Second class is slower than first. The aim was to deliver first class within one business day i.e. deliver the next working day (the post office regard Saturday as a working day). The aim of second class is to deliver within three business days i.e. you post on Monday, it will get delivered by Thursday.
The post office would deliberately slow second mail down to give priority to first class mail (after all that is what the customer paid a first class stamp for). The mail would be segregated. The sending dispatching office would not sort the letter until the following day i.e. if you posted the letter on Monday, it would get sorted on Tuesday. The letter would be sent to the delivering office on Tuesday, who would aim to deliver on Wednesday. However, if the delivery office was overwhelmed with first class mail on Wednesday, they could hold the second class mail for a day and deliver on the Thursday.
Tha mail segregation is actually more efficient than most people give it credit for. It allows the poster to decide for himself how urgent the mail is and pay for it accordingly. I've lived in countries where all mail gets the same service (i.e. no first and second class mail) and consequently it takes about 2-3 days for most of the mail (including local mail) to get delivered.

we dont have a separate second class mail option any more... its ALL slow!

But yeah.. they did process it slower cos you paid less for it, but only cos first class gets priority attention

Now its all slower cos theres only one delivery a day - does that mean its ALL second class now?

I cant beleive they now charge based on the size of your envelope.. apparently size DOES matter - and I can see lots more people trying to cram reems of folded paper into tiny envelopes

It sets on the back burner for a day. It's cheaper than 1st class though. Sometimes the mail will bump real passengers.

cos they have so much to carry that they do sort it all at hte same time as it comes in but don't take all of it out at once!! otherwise our posites would be walking roundwith hunchbacks...poor souls!!
