"Hazel" is a color that really is a variable color, based on all sorts of conditions. A hazel eye can appear to be different colors at different times. Mine were solidly blue until a few years ago, and now they shift based on variables that I still haven't pinned down. I used to think it was just the lighting, but I'm starting to wonder if exhaustion plays a role in it.

Eye color is complex, decided by multiple alleles of multiple genes. Hazel is probably what happens when they don't match up to any other specific combination.

As for "legal" definitions, my driver's license still says "blue" eyes based on a brief glance by someone at the BMV.
