Stay away from the Asian retaurants as a vegetarian option, since they use lard to cook their food.
Go to a chain restaurant and order one of their creative salads.

Vegetarian in Lincoln is an interesting concept....
Try Grasanti's. I'm sure they have vegetarian options.
