There's a really easy program called Handbrake. You just pop in the DVD and tell it to convert the movie to a file you can put in iTunes. After importing it into iTunes, click it and go up to Advanced --> Convert Selection for iPod.

Please note that the Windows version is new

i don't know if you can. As far as I know the only way you can watch movies on a video ipod is when you download them from itunes. And why not? They might as well take more of our money.
