Caucasian is your race. Hispanic would be the more appropriate and accurate choice for ethnicity. Latino works but only if you are actually of Latin American origin. (People from Spain can't, by definition, be Latino but they are, of course, Latin. There's a difference.) Also, skin color has nothing whatsoever to do with race.

I put family information into a database for a Parents & Toddlers class. If two ethnicities are selected, I enter "MIXED" (which, like my child, I like). You may not have that option; if not, I think that due to institutionalized racism, you'd be perceived (by many agencies) as Hispanic. I don't support this kind of catagorizing, in spite of the fact it's intended to provide benefit to various groups of people.

You can choose. However, one category I have seen on U.S. Census forms is "white non-hispanic," implying that a white hispanic would be classified as hispanic. Census workers, however, are instructed to accept the individual's description of his/her own ethnicity. When I worked for the Census, two half-black-half-white girls were described to me by their family as "Scottish," so I put that down.

Caucasian.... I'm 100% sure
I have a friend who is half italian half mexican and when we were in school she used to ask everybody this question.
The conclusion was : Caucasian.
P.S: if you were chinese and you had the same looks, would you consider your ethnicity 'asian'?

Hmm....I guess it's just a matter of what you wish to identify yourself as. A friend of mine was white and Mexican and she just classified herself as Mexican.
