I know how they do the wildcard series and that the All Star Game determines the World Series home advantage, but I can't remember how they do the NLCS. Is it by best record?

All playoff series' except the World Series are determined by "best record".

If two teams have a tied record, home field advantage is determined by head to head match up. If their head to head match up is tied, which is rare, then I believe it's determined by coin toss.

Actually it's not always the team with the best record, as the posts above me said. The Tigers had a better record than the A's, and the A's still have home field advantage. If it's two division champions that are playing each other, then the team with the best record gets home field. But if it's a division champion against the wild card, then the division champion gets home field no matter what, even if the wild card team has a better record.

If the Mets & St Louis play each other it's determined because the Mets have a better record.
