Definitely The Blackboard Jungle... a very adult-themed novel, dealing with race and class disparity in inner-city classrooms. The movie had to be so much narrower in scope than the book for censorship purposes. "Mr Daddy-o!"

I've got several:
"The Day They Came to Arrest the Book" by Nat Hentoff- Students and faculty at a high school become embroiled in a censorship case over "Huckleberry Finn."
"The Wave" by Todd Strasser- The Wave is based on a true incident that occured in a high school history class in Palo Alto, California, in 1969.
The powerful forces of group pressure that pervaded many historic movements such as Nazism are recreated in the classroom when history teacher Burt Ross introduces a "new" system to his students. To make things worse, Amy and Adam are involved in the "color game" at school, an experiment that's designed to make students aware of class and racial prejudices.
Now the experiment threatens to alienate Amy from her friends and tear her apart from Adam. She knows it's time to rebel against the color game. But will the rest of the class follow her lead?

Good Morning Miss Dove would be my choice for a book about a teacher. It is a book by Frances Gray Patton.
The Teacher's Funeral by Richard Peck would be my choice for a book about a school. In The Teacher's Funeral a young boy's worst nightmare is realized...his sister will be the new teacher at the one room school house. The book focuses mainly on these comical students and one crazy school year. :) Very funny.
A good picture book about a teacher would be Thank You Mr. Falker by Patricia Polacco

The catcher in the rye by JD salinger
This really not about a teacher or school but it's about an ordinary student, Holden Caulfield.
I find story really nice, my friends too like it. I liked it to the point of using the character's name as my password on my yahoo accounts.

A kindergarten teacher I had. I lived in a home that was not peaceful. This teacher Mrs. Cook and her husband were so full of gentleness and kindness and she would play the piano at nap time. For some reason she just stuck in my mind forever. I think that is why I liked going to school all my years to get away from the chaos at home. I am now in my 30's and even when I think of it now I can see it happening as if it was yesterday, it brings me gratitude for her.

I love the book "Hating Alison Ashley" by Robin Klein.
It is one of the books that started my love affair with reading when I was in primary school. And then when I was in year 12 in high school, I performed in the school play of the book, which was awesome fun!!!
I didn't like the movie that came out last year with Delta Goodrem though.

The common thread would be characters you care about, not necessarily like but you care what happens to them, and they are all believable.
